  • Divide the dough into two discs, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour. Chilling helps the dough firm up, making it easier to roll and cut.


2. Roll and Cut the Cookies


  • Preheat your oven to 350°F (175°C).

  • Lightly flour your work surface and rolling pin. Roll out one disc of dough to about 1/8 inch thickness.

  • Use a round cookie cutter (about 2 inches in diameter) to cut out cookies. For half of the cookies, use a smaller cutter or a shape cutter (heart, star, circle) to cut out the center. These will be the tops.

  • Place the cookies on a baking sheet lined with parchment paper, spacing them about 1 inch apart.
